Portuguese Codfish Cakes recipe

  1. Rinse the 250gr of Portuguese cod (salted and dried) and keep it in a bowl with water for 12 hours to 1 day, changing the water 4 to 5 times. Taste it to see if it is not too salty at the end
  2. Boil 200gr of potatoes with skin until they get tender; peel and do a pure with them
  3. Cook the cod for about 20 minutes. Take the bones and the skins and flake the fish, reducing it to threads. The trick here is to use a clean cloth, put the cod inside and rub it until it is reduced to threads
  4. In a bowl, mix the potato pure, the cod, chopped onion (1/2 an onion) and parsley, a small glass of Port wine, salt, pepper and nutmeg
  5. Add 3 to 4 egg to the mixture, one by one, achieving a paste that should be stiff but not too dry. You can add a bit of milk to this mix to make creamier
  6. Use 2 spoons to mold the codfish cakes and fry them in hot oil. Put them in kitchen paper, to absorb the excess of oil
  7. Enjoy!
